Product Notes

Edi Simcic Rebula is a distinguished Slovenian wine, capturing the essence of the region's terroir. This Ribolla Gialla variety is celebrated for its golden-yellow hue and complex bouquet of ripe apples, hazelnuts and honey. On the palate, it is beautifully balanced with a delightful fusion of subtle citrus notes, adroit minerality and a hint of savoury spice. A full-bodied wine, the Simcic Rebula holds a textured mouthfeel ending in a resonant finish. Best savoured with a delicate dish like grilled white meat or seafood, this wine is a majestic expression of Ribolla Gialla's potential.

Tasting Notes

The nose is matured and youthful at the same time. It offers discrete roasted notes and an aroma of yellow fruit. It has a firm, full mouth feel with a longer aftertaste. It wins us over with distinct acidity, saltiness, and a mineral note, which cleans the mouth. After three or four years and with the development of tertiary aromas, it becomes even more complete and excellent than it was in its youth.

About the Winery

Edi Simcic

Nestled along Gorenska Brda's rolling hills, the Edi Simcic winery is Slovenia's hidden gem, crafting the finest wines with meticulous detail and intense passion. For several generations, the Simcic family have tended to their lush vineyards, producing wines which echo the delicate balance between tradition and innovation.

Occupying 18 hectares of Slovenia's prime winemaking region, this family-run estate places great emphasis on producing wines of exceptional quality and distinct character. Their philosophy is centred around the significance of nature's seasons and the intricacies of the winemaking process. Guided by their respect for the land and the cycles of the earth, the Simcic family cultivate their vineyards sustainably, adhering strictly to environmentally friendly farming practices.

At the heart of the winery is core belief: that good wine is born from the vineyard, not the cellar. This ethos transposes onto every bottle they craft, showcasing a genuine expression of the vineyard's identity. The wines they create - predominantly white - are famed for their bold and complex character, striking the perfect harmony between opulence and subtlety.

The aging process is undertaken in their state-of-the-art cellar, employing strategic combination of French barriques and stainless steel. This versatile approach results in wines that have the ability to age gracefully, and reflects the perfect synergy of modern techniques and traditional wisdom. Meanwhile; their hospitality has been commended for its genuine warmth, offering personalised tastings and vineyard tours for those seeking a fully immersive winemaking experience.

Regarded as one of the top wine producers in Slovenia, and arguably in Central Europe, the Edi Simcic winery inherits its wisdom, tradition, and love for the land from its past generations. Their wines encapsulate the essence of Gorenska Brda's terroir, and in every harvest, shines a testament to their dedication, passion, and remarkable pursuit of excellence.
