Vassaltis Santorini Barrel Aged Assyrtiko boasts an ambrosial blend of ripe citrus fruits, tempered with delicate floral accents. This opulent wine proffers intensely concentrated flavours due to the unique volcanic soils of Santorini in which the Assyrtiko grapes are grown. Barrel ageing gifts the wine with subtle oaky notes, infusing additional complexity and gravity. On the palate, it's an exceptional marriage of luscious lemon and apricot hues, buoyed by a compelling minerality. The bouquet and flavour profile presents a perfect balance of acidity and alcohol, rolling into a refined, lengthy finish. It’s a Greek masterpiece of wine craftsmanship, exemplifying elegance and depth.

Nose: Rich and complex, notes of orange, lemon and other citrus fruits, hints of figs, flint stone, vanilla, toast, saline. Taste: Salt, citrus, mushrooms,primary fruit, mouthwatering acidity, structured and concentrated, full bodied, well balanced minerality, very intense and longafter-taste.

Located on the stunning Greek Island of Santorini, Vassaltis Winery is a premium wine producer which has quickly gained an international reputation for excellence. Covering over 2 acres of land with a state-of-the-art winery and tasting room, Vassaltis is on a mission to showcase the innate quality of Santorini as an unique wine-growing region.

Established in 2016 by Yannis Valambous, this young winery has grown developmentally, harvesting grapes from vineyards with an average age of fifty years. The result? Highly coveted wines that beautifully express the unique masochism of their terroir.

Vassaltis Winery is perhaps most well-known for its outlandish Assyrtiko wine, grown from the native Assyrtiko grape. This crisp, dry varietal is renowned worldwide for its chalky minerality and unique citrus notes. The winery also offers an aged Assyrtiko, which boasts a fuller body and deeper complexity derived from its extended fermentation process. Moreover, Vassaltis offers a refreshing blend of Aidani and Athiri grapes, that culminate in a white dessert wine satisfyingly balanced with sweetness and acidity.

The winery’s minimalist architecture reflects an innovative approach to wine production. It fuses traditional Santorin viticulture with modern equipment and techniques; marrying stainless steel vats and French oak barrels with natural cork and glass stoppers.
