Vassaltis Santorini Assyrtiko is an exquisite Greek wine, hailing from the sun-drenched island of Santorini. Renowned for its crisp, refreshing character, it presents an intense nose of flint, lemon peel and mineral tones. Its exceptional palate showcases harmonious acidity and complexity. This wine offers a true expression of Santorini's terroir, featuring citrusy dominance layered with earthy minerals. Matured in French oak barrels, it acquires a complex character over time. Tasting Notes

An exceptionally complete wine with a great ageing potential, shows the true essence of what Santorini and Assyrtiko are about: Aromatics of basalt and pumice stone with ripe tropical fruits, honeysuckle and maritime salinity, and a palate of salty green fruits with high levels of minerality and acidity. The long aftertaste adds depth and weight to the wine making it a perfect pairing for seafood and fish.

Located on the stunning Greek Island of Santorini, Vassaltis Winery is a premium wine producer which has quickly gained an international reputation for excellence. Covering over 2 acres of land with a state-of-the-art winery and tasting room, Vassaltis is on a mission to showcase the innate quality of Santorini as an unique wine-growing region.

Established in 2016 by Yannis Valambous, this young winery has grown developmentally, harvesting grapes from vineyards with an average age of fifty years. The result? Highly coveted wines that beautifully express the unique masochism of their terroir.

Vassaltis Winery is perhaps most well-known for its outlandish Assyrtiko wine, grown from the native Assyrtiko grape. This crisp, dry varietal is renowned worldwide for its chalky minerality and unique citrus notes. The winery also offers an aged Assyrtiko, which boasts a fuller body and deeper complexity derived from its extended fermentation process. Moreover, Vassaltis offers a refreshing blend of Aidani and Athiri grapes, that culminate in a white dessert wine satisfyingly balanced with sweetness and acidity.

The winery’s minimalist architecture reflects an innovative approach to wine production. It fuses traditional Santorin viticulture with modern equipment and techniques; marrying stainless steel vats and French oak barrels with natural cork and glass stoppers.
