Exuding a luminous straw-yellow hue, this fine blend offers refreshing notes of ripe pears, fragrant lemon zest, and delicate white flowers. The palate encounters a compelling juxtaposition of robust minerality and vibrant acidity, certainly a melange reminiscent of Santorini's volcanic terroir. Nassitis finishes with a persistent and invigorating freshness, drawing connoisseurs back for another sip. A wine that truly captures both the passion of Vassaltis Vineyards and the unique spirit of Greek viticulture, it pairs impeccably well with fresh seafood dishes.

About the Winery

Vassaltis

Located on the stunning Greek Island of Santorini, Vassaltis Winery is a premium wine producer which has quickly gained an international reputation for excellence. Covering over 2 acres of land with a state-of-the-art winery and tasting room, Vassaltis is on a mission to showcase the innate quality of Santorini as an unique wine-growing region.

Established in 2016 by Yannis Valambous, this young winery has grown developmentally, harvesting grapes from vineyards with an average age of fifty years. The result? Highly coveted wines that beautifully express the unique masochism of their terroir.

Vassaltis Winery is perhaps most well-known for its outlandish Assyrtiko wine, grown from the native Assyrtiko grape. This crisp, dry varietal is renowned worldwide for its chalky minerality and unique citrus notes. The winery also offers an aged Assyrtiko, which boasts a fuller body and deeper complexity derived from its extended fermentation process. Moreover, Vassaltis offers a refreshing blend of Aidani and Athiri grapes, that culminate in a white dessert wine satisfyingly balanced with sweetness and acidity.

The winery’s minimalist architecture reflects an innovative approach to wine production. It fuses traditional Santorin viticulture with modern equipment and techniques; marrying stainless steel vats and French oak barrels with natural cork and glass stoppers. Though the establishment’s aesthetic is rather sleek and modern, the island's cultural heritage and volcanic landscape are depicted throughout.

The winery offers an aging cellar, where you can taste the full range of Vassaltis wines. Each tasting is perfectly partnered with a carefully curated selection of local dishes, allowing visitors to enjoy the quintessential Greek culinary experience.

Visitors to Vassaltis Winery can enjoy a variety of enthralling tours, fit for both the novice wine enthusiast and the seasoned connoisseur. Whether you're savouring a sip of the infamous Assyrtiko wine, wandering through the vineyards or understanding the intricacies of winemaking, you'll undoubtedly be charmed by the winery's enchanting allure. You leave with an understanding of why Vassaltis Winery is such a jewel in Santorini’s viticultural crown.
